The Whole30: Day 24-25

Never a tasteless moment with these ladies!  Just arrived back after a lovely weekend away with the girls.  Yes, by the looks of the pictures the food was amazing and of course… Whole30 approved!

Looking for meal inspiration in your last week of the Whole30?  Try some of these meal ideas…

  • Grilled BBQ Chicken & Roasted Summer Vegetable Salad (Bottom row, right)
  • Taco Lettuce Wraps w/ Fresh Pico De Gallo & Cilantro Lime Cauliflower Rice (Top row, left)
  • Raw Chocolate Strawberry Tart (Center)

By far the best part of the Whole30 beyond the great taste – simple cooking.  Everything we made was simple, easy, and effortless.  The chicken marinate I made up in my head using garlic, tomatoes, and a variation of taco spices.  The salad was a group effort made with roasted eggplant, zucchini, sweet potatoes, and butternut squash, tossed into arugula and spring lettuce mix.  The tacos were packed with flavor and easy to prepare.  Check out The Whole30: Day 10 for more on how to.  The cauliflower rice was a new one for me.  It was the girls’ idea and man did they smash this one out of the ball park!  Look for a recipe on Pinterest, or stay tuned!  And not to be forgotten… the raw chocolate tart was soo good that it had me guessing if it was really sugar, dairy, and gluten free!  Honest!

Don’t get caught in a Whole30 rut!  Think outside the box!  Read recipes… look on Pinterest… cook with a group of friends… and be sure to enjoy your Whole30 just as you would any other time of the year.  Live.  Laugh.  Love…  And eat good food.  It’s pretty simple.
